The Academic Food Workshop (AWV) is a collaboration that works on the food revolution.


The food we consume in today's globalized society is produced all over the world and often transported over long distances. Such an economically efficient food production and distribution system provides a variety of food products all year round. However, the complexity of the current system, which decouples food production, consumption and long-distance transport, has raised concerns about its impact on society and the environment.

In response, we see a trend for city-based solutions and local food systems based on less complex and shorter supply chains. The alternative solutions operate at an urban or peri-urban scale and are expected to reconnect production and consumption, leading to healthier consumption patterns, lower carbon emissions and food waste.
