Before food ends up on our plate it has, in many cases, already traveled halfway across the globe. Not only do food-miles contribute to global warming, it also disconnects us from our food. A shorter food chain is therefore better for the environment and it can reconnect us with the food we eat.

This collection contains research on the local production and distribution of food, collected by the editors of openresearch.amsterdam.
